Over the weekend, I had the opportunity to visit my friends Lauren and Joe who live in Westchase. I was welcomed with a nice glass of Viognier and a salad which resembled papaya. To my complete surprise, I found out Lauren was serving me a yellow watermelon salad! I had no idea yellow watermelon existed. Lauren picked up the yellow melon from a Farmers Market on Gunn Highway.
This recipe would be perfect for any summer party or BBQ and is so easy to make. If you cannot find a yellow watermelon, red works just as well (I do suggest seedless).
Ingredients:
- Watermelon
- Basil
- Corse Kosher Salt
- Balsamic
- Feta Cheese
Chop your watermelon up in bite size pieces. Plate onto a plate and sprinkle with the salt. Top with crumbled Feta Cheese, sliced basil and a balsamic drizzle. This salad works excellent with a glass of crisp white wine, Viognier paired perfectly. Pinot Grigio or Sauvignon Blanc would work as well.
