Easy Weeknight Recipe – Low Carb Chorizo Pizza

Here’s a quick and easy recipe to make at home after a long day at work or school. The hardest part is waiting for the oven to heat up. Pick up these items on the way home today:

Ingredients

2 links chorizo sausage
Olive oil
1 package 8 inch low carb tortillas
1 lb Mex blend shredded cheese
1 jar good quality tomato sauce

Method

Preheat oven to 475 degrees F. Place pizza stone or sheet pan in the oven to heat up. Take the casing off the sausage, chop finely and saute in a dry pan heated over high to medium high heat, until nicely browned.Set aside.

Brush tortilla with olive oil on both sides and put on the pizza stone lightly brown. Flip over and remove when lightly browned on both sides. Add cheese, leaving a 3/4 inch border. Drizzle on some sauce and distribute some cooked chorizo on the top.

Place back in the oven just until the cheese gets melted, about 2 minutes.

Let cool for a couple of minutes, cut into quarters and enjoy!
